Curry Chronicles: Unraveling the 4,000-Year Journey of India's Iconic Dish

Curry, the hallmark of Indian food, has a rich and intricate history that goes back thousands of years. Archaeological excavations in Farmana, to the southeast of Rakhigarhi, have unearthed remnants of the world's oldest known curry recipe, dating almost 4,000 years back. The ancient dish contained aubergine (brinjal), turmeric, ginger, and garlic—ingredients that remain at the heart of Indian cuisine even today.

 

The word "curry," however, is not indigenous to India. It derived from the Tamil term kari, used for a spiced sauce or relish served over rice. The Portuguese made the word mainstream during their colonial contact in South India, and British colonizers borrowed it later as a generic expression for Indian foods prepared with spices. Curry changed throughout the world over centuries through spice routes and colonial movements, shaping cuisines in Southeast Asia, Japan, the Caribbean, and elsewhere.

 

Curry today stands for more than merely a dish; it is a cultural heritage that links ancient past with contemporary food trends from around the globe. From its origins in Harappan cooking to international popularity, curry remains an inspiration for food enthusiasts across the globe.
