India’s processed potato industry has seen a dramatic transformation in 2024–25, with Gujarat overtaking traditional leaders to become the largest producer. The state’s output reached 48.58 lakh tonnes, with over 25% dedicated to processinggrade varieties used in chips, fries, and frozen foods.
