Dahi bara aloo dum is comfort food layered in three parts: fluffy lentil vadas soaked in spiced curd, a slow cooked, slightly smoky potato curry and crunchy, chatpata toppings. To serve, place a couple of soft dahi baras in a bowl, spoon some aloo dum on top, add extra curd from the dahi bara bowl and finish with onions, coriander, green chillies, a sprinkle of jeera lanka (roasted cumin and chilli powder), kala namak and fine sev for crunch.
